The fanciest restaurant in Australia? Feu just opened at The Belongil in Byron Bay, a French-inspired fine diner from chef Shannon Bennett, where you compose your own tasting menu by picking miniature clay sculptures of each ingredient. Chris Hemsworth and other celebrities are praising the state-of-the-art cuisine and atmosphere, Chris already called it his "new favourite restaurant in the world." 🎥 Image credit:

What Feu is

Feu is a 40-seat fine dining restaurant on Childe Street in Belongil, the stretch of beach immediately north of central Byron Bay. It opened in December 2025 as the flagship of The Belongil, a four-venue precinct built by chef Shannon Bennett and business partner Glen Norman for a reported figure above 10 million AUD.

The format is the thing people talk about. There is no printed menu and no fixed degustation. Guests are given a box of hand-made porcelain objects, each representing a seasonal ingredient, and choose three, five or seven of them, then lay them out in the order they want to eat. Each piece carries an NFC chip that pulls up where that ingredient came from. The kitchen then builds dishes in response, all of them cooked over charcoal from local yellow box timber.

The ingredients themselves were assembled over a twelve month sourcing trip up the east coast of Australia, and the list runs to things like bay lobster and flame tail snapper. The room was designed by Lee Brennan with Sydney studio Nakatomi, using timber salvaged from a 300 year old Japanese temple and from an old whaling station, and hangs work by Otis Hope Carey and David Noonan.

Who cooks here

Shannon Bennett founded Vue de Monde in Melbourne and spent six years out of the kitchen before The Belongil brought him back. He lives at Belongil, which is part of why the project ended up here rather than in a capital city. Group executive chef across the precinct is Cory Campbell, who cooked at Noma in Copenhagen. Carlos Simoes Santos runs the wine as master sommelier and Rewenka De Buhr heads pastry. The bistro next door is led by Caitlin Koether, previously at Molli and at Relae in Copenhagen.

Awards and press

  • Condé Nast Traveller Hot List 2026: named among the year’s best new restaurants worldwide, one of three Australian entries alongside Yiaga in Melbourne and Golden Avenue in Brisbane.
  • Shannon Bennett: Pressure Cooker, a six-part documentary on BINGE released in 2026, follows Bennett’s return to the kitchen and the build and opening of The Belongil.
  • Chris Hemsworth ate at Feu in January 2026 and called it his new favourite restaurant in an Instagram post to 58 million followers.
  • Covered on opening by Gourmet Traveller, Hospitality Magazine and the Qantas Travel Insider.

Note that Australia has no Michelin Guide, so nothing here is starred and no restaurant in the country can be.

How the menu works

You do not order dishes. You order ingredients, and the kitchen decides what happens to them.

  • The box: porcelain pieces, one per seasonal ingredient, handed to the table at the start.
  • Your choice: three, five or seven pieces, chosen and then arranged in the sequence you want them served.
  • Dietary needs: declared at the same moment, before anything is cooked, so restrictions are designed in rather than worked around.
  • The fire: everything passes over charcoal from yellow box, a local hardwood, which is the constant across every course.
  • Supplements: caviar and a cheese course can be added on top.
  • Drinks: a cellar built to follow the sequence, with pairings offered by the sommelier team.

What to expect at the table

The pacing follows your own order, so no two tables eat the same meal on the same night. Reports from the first year describe a French technical base applied to Australian seafood and produce, heavy on grill and smoke, with more theatre in the service than Byron Bay is used to. Allow three hours. The precinct also lets you fill the evening around it: a drink at the kiosk or the bistro before or after is a cheaper way to see the rest of the site.

What it costs

Prices are the restaurant’s own published rates in Australian dollars. USD figures are approximate and move with the exchange rate.

ItemPrice
Three ingredients, per person280 AUD, about 185 USD
Five ingredients, per person320 AUD, about 210 USD
Seven ingredients, per person360 AUD, about 240 USD
Caviar supplement75 AUD, about 50 USD
Cheese supplement30 AUD, about 20 USD
Wine and pairingsCharged separately

This is at the top of the Australian price range, and an evening for two with wine has been reported in the local press running towards four figures. The Belongil Kiosk, on the same site, keeps almost everything under 20 AUD if you want the location without the bill.

How to book

  • Online: SevenRooms, reached through belongilgroup.com under the Feu venue page.
  • Phone: +61 2 5643 9377.
  • Private hire: Feu takes exclusive bookings and bespoke events through the same contacts.

Book early. Forty seats, three lunch services and three dinner services a week is a small amount of supply for the most talked-about opening on the north coast. Hours have already changed once since opening, so treat the published timetable as current rather than permanent.

Getting there

  • Address: 33-35 Childe Street, Byron Bay, NSW 2481, in the Belongil beachfront strip.
  • From Byron Bay town centre: about 5 minutes by car, or a 25 to 30 minute walk along the beach and Childe Street.
  • From Ballina Byron Gateway airport: roughly 30 minutes.
  • From Gold Coast airport: about 50 minutes to an hour.
  • Parking: street parking around Childe Street, limited on summer evenings.
  • Taxis and rideshare serve Belongil, but book the return in advance on busy nights.

Before you go

  • Book weeks out, and further ahead for Christmas, January and school holidays.
  • Choose your count before you sit down. Three ingredients is a shorter meal, seven is a full evening; the price step between them is smaller than the difference in length.
  • Say everything about diets at the start. The format only works if the kitchen knows before it begins.
  • Allow three hours and do not stack a second booking after it.
  • Consider the bistro instead if you want Shannon Bennett’s cooking at a fraction of the cost. The 80-seat Belongil Bistro sits on the same site.
  • Pair it with the rest of Byron. For a completely different Northern Rivers meal, see my Farm Byron Bay review.
  • Check the hours before you go. The hours on this page come from the venue’s public listings, which drift, so confirm on Google Maps or the venue’s own channels before a special trip.

Frequently asked questions

How much does dinner at Feu cost?+

Feu prices by the number of ingredients you choose: 280 AUD for three, 320 AUD for five and 360 AUD for seven, roughly 185 to 240 USD per person. A caviar supplement is 75 AUD and cheese is 30 AUD. Wine and pairings are charged on top, so a full evening with the cellar behind it lands well above the headline figure.

How does the menu at Feu work?+

There is no printed menu. You are handed a box of hand-made porcelain pieces, each one standing for a seasonal ingredient, and you pick three, five or seven of them and set them in the order you want to eat. You flag any dietary needs at the same time, and the kitchen builds the dishes around your selection. Every ingredient is cooked over charcoal made from local yellow box timber.

Who is the chef at Feu?+

Feu is the flagship of Shannon Bennett, the chef who founded Vue de Monde in Melbourne, who built The Belongil with business partner Glen Norman. The group executive chef across the precinct is Cory Campbell, formerly of Noma in Copenhagen, with Carlos Simoes Santos as master sommelier and Rewenka De Buhr as group pastry chef.

Do I need to book Feu in advance?+

Yes. Feu seats about 40 people and is the most in-demand table in Byron Bay since it opened, so book as far ahead as you can. Reservations go through SevenRooms from belongilgroup.com, or by phone on +61 2 5643 9377. Byron Bay's school holiday and summer weeks are the hardest to get.

What days is Feu open?+

Feu serves lunch Friday to Sunday from 12:00 and dinner Thursday to Saturday from 17:30. Those hours have shifted since opening, including a stretch in mid 2026 when Feu ran Tuesday to Sunday while the Belongil Bistro closed, so confirm the current timetable when you book.

Why does everyone call Feu Chris Hemsworth's favourite restaurant?+

Chris Hemsworth and Elsa Pataky, who live nearby at Broken Head, ate at Feu in January 2026 and Hemsworth posted about it to his 58 million Instagram followers, calling it his new favourite restaurant and thanking Shannon Bennett for one of the most epic gourmet food adventures he had had. The post drew close to 600,000 likes and the label stuck.

What else is at The Belongil besides Feu?+

The Belongil is a four-venue precinct that opened in December 2025 on a reported budget of more than 10 million AUD. Alongside Feu there is the 80-seat Belongil Bistro, a members-only cocktail bar called Blind Tiger, and a beachfront kiosk where most of the menu is under 20 AUD. The kiosk and the bistro are the way to see the site without the fine dining spend.

Does Feu have a Michelin star?+

No, and it cannot. The Michelin Guide does not cover Australia, so no Australian restaurant holds a star. Feu's international recognition so far is its place on the Condé Nast Traveller Hot List 2026 of the year's best new restaurants, alongside Yiaga in Melbourne and Golden Avenue in Brisbane.
