A Michelin-Guide restaurant inside a concrete-temple hotel, the pool is inspired by a 6th-century Istanbul cistern. Amazing matcha, pretty good food, a bit pricey. You don't have to stay at the hotel.

Glou Glou is the restaurant and natural wine bar on the terrace of Casa TO, the nine-suite hotel Ludwig Godefroy built in raw concrete in La Punta Zicatela. Here is how each half works, what breakfast and dinner cost, how to book as a non-guest, and how to get there.

What Glou Glou and Casa TO are

Casa TO is a nine-suite boutique hotel in La Punta Zicatela, at the southern end of Puerto Escondido. It was designed by the architect Ludwig Godefroy and completed in 2022, built from concrete, steel, clay and wood as what its architect calls a contemporary interpretation of a Oaxacan temple. The building’s centrepiece is a long covered pool punched with circular cutouts, with a stepped concrete solarium beside it.

Glou Glou is the restaurant and natural wine bar on the hotel’s terrace, opened in May 2023 by chef Luis Pabón and sommelier Gabriela Moreno. It is open to the public for breakfast every day and for dinner six nights a week, and it takes its own reservations rather than working through the hotel.

The two are worth understanding separately because they carry separate credentials. Glou Glou entered the Michelin Guide Mexico as a Selected restaurant in the 2026 selection, announced in May 2026, one of three new Oaxaca entries that year. Casa TO is listed in the Michelin Guide’s hotel selection for Puerto Escondido. Neither holds a Michelin star or a Bib Gourmand.

Who is behind it

Chef Luis Pabón runs the kitchen and Gabriela Moreno runs the cellar. They describe the project in plain terms: young wines and authentic food, essential and unpretentious cooking. The cellar leans toward organic and natural bottles, from Pét Nats and light whites through orange wines and low-alcohol reds, with Mexican producers alongside imports and a few classics such as Champagne for contrast.

Ludwig Godefroy, the architect, is French and based in Mexico, and is one of the names most associated with the heavy concrete architecture that has spread along this coast in the last decade. His references here are documented and unusual: the sixth century Basilica Cistern in Istanbul and the nineteenth century Hornsey Wood Reservoir in London, both grid-structured water buildings, reworked as a hotel pool in the tropics.

Awards and press

  • Michelin Guide Mexico 2026: Glou Glou added to the Selected list, one of three new Oaxaca entries announced in May 2026, alongside Aguamarga in Oaxaca de Juárez and Vianda in Guadalupe Etla. Selected, not a star or a Bib Gourmand.
  • Michelin Guide Mexico: Casa TO listed in the hotel selection for Puerto Escondido.
  • Google reviews: about 4.8 out of 5 across more than 650 ratings. OpenTable: about 4.7 out of 5.
  • Widely covered in design press for the architecture, including We Heart and Amazing Architecture.

How the menu works

Casa TO, the building

You do not need a room to see the architecture, because the restaurant sits on the terrace above the pool. The concrete stairs are lit with candles at night. Inside, the dining room is built around a full counter, a run of tables down the centre, and tiered steps lined with cushions that serve as extra seating. The steps photograph beautifully and are the least comfortable place to eat a long meal, so choose deliberately.

Glou Glou, the restaurant

  • Breakfast, 8:30am to noon daily: fruit with yoghurt and jam, a smoked ricotta omelette with house bacon and salsa macha, arepas, French toast with crème anglaise and fried pecans.
  • Dinner, 6pm to 10pm Thursday to Tuesday: a la carte, or a four-course or seven-course tasting menu with natural wine pairings.
  • Signature plates: watermelon, avocado and fish aguachile, grilled catch of the day with a meunière sauce, oysters, a chocolate and salted caramel tart.
  • The wine list: the reason many people come. Ask Gabriela Moreno’s team for a pairing by the glass rather than ordering blind.
  • Vegetarians: the kitchen lists vegetarian options and the breakfast card in particular is easy.

What I ate

I went for breakfast rather than the tasting menu. The cold matcha was excellent and is the thing I would come back for. After that came a ricotta omelette, juicy and generous, and asparagus with figs. The bill landed around fifty dollars, which is a lot for breakfast anywhere on this coast, and my honest read at the time was that the food was good rather than remarkable while the room was genuinely unlike anything else in Puerto Escondido. One practical note from that morning: I sat on the tiered cushion seating, and next time I would ask for a table.

What it costs

Glou Glou is priced as a wine restaurant in a design hotel, not as a beach cafe. The figures below are what listings show and what I paid.

ItemPrice
Per person, typical spendFrom about 1,000 MXN, roughly 55 USD
Breakfast for one with drinksAbout 50 USD when I went in July 2026
Dinner for two, a glass each, shared starter and dessertAround 3,000 MXN, roughly 160 USD
Four or seven course tasting menuPriced separately, confirm on booking
Wine pairingsCharged separately

The wine list is where a bill grows fastest, and it is also the best argument for eating here, so decide which of those matters more before you order. Prices move with the season, so confirm the current card when you reserve.

How to book

Reservations are advised for dinner and sensible for breakfast in high season.

  • Website: glouglou.mx has its own reservation page.
  • OpenTable: search for Glou Glou, Brisas de Zicatela.
  • Phone: +52 954 100 4373.
  • Instagram: @glouglou.mx.

Say when you book whether you want a table, a counter seat or the cushioned steps, and flag dietary needs, since the tasting menus are fixed in advance. There is no dinner service on Wednesday.

Getting there

  • Address: Morelos s/n, terrace of Hotel Casa TO, Brisas de Zicatela, Puerto Escondido, Oaxaca.
  • Neighbourhood: La Punta Zicatela. Most La Punta hotels are a five to ten minute walk away.
  • From the centre of Puerto Escondido: about 15 to 20 minutes by taxi or colectivo.
  • From Puerto Escondido airport: about 20 to 25 minutes by car.
  • Parking: sand streets with informal parking. Walking is simpler.

Before you go

  • Ask for a real table unless you are there mainly for the photographs.
  • No dinner on Wednesdays. Breakfast runs every day.
  • Come for the wine, not the bargain. The cellar is the strongest part of the offer and the prices reflect a design hotel.
  • Concrete and bare feet do not mix in the sun. The terrace gets hot by late morning.
  • Book the tasting menu ahead if you want the seven-course version, and mention allergies then.
  • Pair it with the other architecture stops. La Bóveda at Casona Sforza is the brick-vault counterpart down the coast, and Casa Wabi and Meridiano are the art foundations to the north.
  • Check the hours before you go. The hours on this page come from the venue’s public listings, which drift, so confirm on Google Maps or the venue’s own channels before a special trip.

Frequently asked questions

Is Glou Glou a Michelin star restaurant?+

No. Glou Glou is a Selected restaurant in the Michelin Guide Mexico, added as one of the new Oaxaca entries in the 2026 selection announced in May 2026. Selected means the inspectors recommend it; it is not a star and not a Bib Gourmand. Casa TO, the hotel it sits on, is separately listed in the Michelin Guide hotel selection.

Can you eat at Glou Glou without staying at Casa TO?+

Yes. Glou Glou is open to the public for both breakfast and dinner, and it runs its own bookings through OpenTable and glouglou.mx. Casa TO has only nine suites, so most people at the tables are outside diners rather than house guests.

What are Glou Glou's opening hours?+

Glou Glou serves breakfast every day from 8:30am to noon. Dinner runs from 6pm to 10pm from Thursday through Tuesday, which means there is no dinner service on Wednesday. Breakfast still runs on Wednesday morning, though it closes slightly earlier.

How much does Glou Glou cost?+

Budget from about 1,000 MXN per person, roughly 55 USD, and more if you drink through the wine list. When I ate breakfast there in July 2026 it came to about 50 US dollars, which is high for a morning meal in Puerto Escondido. Two people at dinner with a glass of wine each, a shared starter and a shared dessert have been quoted at around 3,000 MXN.

Who cooks at Glou Glou?+

The kitchen is led by chef Luis Pabón, with sommelier Gabriela Moreno running the wine programme. The pair opened Glou Glou in May 2023. The house line is young wines and authentic food, and the Michelin Guide describes a menu that pulls from Mexican, European, Indian and Asian cooking.

Who designed Casa TO and what is the pool?+

Casa TO was designed by the French Mexican architect Ludwig Godefroy, completed in 2022, and built from concrete, steel, clay and wood as a contemporary reading of a Oaxacan temple. The covered pool with its circular cutouts and stepped solarium takes its cue from the sixth century Basilica Cistern in Istanbul and the nineteenth century Hornsey Wood Reservoir in London. Local shorthand for the style is tropical brutalism.

Do you need a reservation at Glou Glou?+

Yes for dinner, and it is wise for breakfast in high season. The dining room is small, built around a counter with tables down the centre and tiered steps with cushions. Book through OpenTable or glouglou.mx, or call +52 954 100 4373.

Where should you sit at Glou Glou?+

The tiered steps lined with cushions are the photogenic option and the one most visitors are steered to, but they are not comfortable for a long meal. Ask for a proper table or a seat at the counter when you book if you plan to eat a full menu. Both are available.
